There are ways to make the curry less hot without losing the flavor and taste.

How to enjoy curry

Tips to Make curry just hot enough to suit your taste.

  1. If you are buying the ready masala(spice mixture) from the store, reduce the quantity of red or green chilly that is asked to be added in the recipe.
  2. If you are making your own masala (spice mix- it is really very easy to make your own masala), use less amount of spices which make the curry hot. Namely, cloves, black pepper, red chillies. Reduce the quantity but do not totally omit them as that would change the flavor and taste. Even if you reduce only red chilis or red chili powder, it will help a lot in reducing the hotness.
  3. If you would like to enjoy the hotness but are afraid of feeling the burning sensation later, there are ways to reduce the impact of chillies and spices. You can serve the curry along with Raita or a cup of curd(plain yogurt). That will reduce the severity of the curry.
  4. Drinking a little cold milk after a curry meal can reduce the burning sensation.

Some Curries are made commonly all over India. And there are also curries specific to a region. The ingredients differ according to different states.
