Lehsuni Karela Masaledar-Spicy Garlic Bittergourd Curry Recipe

This lehsuni karela masaledar or the spicy garlic bitter gourd curry recipe is for those who love bitter gourd or karela as it is called in Hindi.


Even those who do not like karela can try this tasty curry as karela is good for health.




How to make lehsuni karela masaledar or spicy bitter gourd curry?


Ingredients for masaledar lehsuni karela


5-6 karelas(bitter gourds)
1 onion chopped
1/4 tsp turmeric (haldi) powder
1/4 tsp. cumin seeds (jeera)
1/4 tsp saunf (fennel seeds)
1 tsp red chili (lal mirch) powder
1 tsp coriander (dhania) powder
11/2 tsp jiggery – gud (grated)
11/2 tsp mustard seeds (rai)
4 garlic cloves (lehsun) (crushed)
Few curry leaves

Method for cooking bitter gourd curry


Peel the bitter gourd and cut each length wise.
Heat oil in a pan. Add the mustard seeds and let them pop.
Add cumin seeds and saunf, curry leaves and garlic.
Stir fry for 10 seconds.
Add the sliced onion and fry for 5-6 minutes or till they turn transparent.
Add all the dry spices and jaggary and mix well.
Add the bitter gourd pieces and sauté for a minutes.
Cover and cook till done on low flame.
Adjust salt. Take off fire.

Serve hot with chapatti or rice.

Even though, I am not a great lover of bitter gourd I really loved this dish. The bitterness of the bitter gourd was not at all felt in this dish and it was so spicy too, which I very well like.
