Badam Kheer - Almond Recipe

Badam Kheer is a nutritious Indian sweet served with a meal as a sweet or as a dessert.

How to make Badam Kheer

Ingredients for Badam Kheer to serve 4

  • Almonds - 1 cup
  • sugar - 1 cup - more or less according to taste.
  • saffron - few strands
  • cardamom powder - 1/2 teaspoon
  • water - 1/2 cup
  • Ghee - 1 tablespoon
  • Milk - 1 liter

Preparation

  • Soak almonds in water for about 1 hour.
  • Peel almonds and grind them to paste using the water. Do not add any extra water.

Cooking Method

  1. Heat ghee in a thick bottomed pan. Add almond paste and fry on low flame for 4-5 minutes stirring all the while.
  2. Add sugar. Mix well and cook for 5 minutes.
  3. Add milk and boil for 15 minutes. Add cardamom powder and saffron strands. It will enhance flavor and color too.

Serve hot or chilled. Enjoy this in the hot summer afternoons as a cool snack or as a desert.
