Veg Pulao Recipe

Veg pulav or veg pulao is a one dish meal.


Make it when you are not in a mood to cook an elaborate meal.

Make it when you come home late and want an easy meal.

Serve it as a quick meal or at a party.

Veg pulav is filling, colorful (depending on the vegetables you add) and yummy.

How to make vegetable pulav

Ingredients for veg pulav


basmati rice - 2 cups
onion- 3 medium
carrot - 2 medium
potatoes - 1
tomatoes - 2
refined oil or ghee - 5 tbsp
Coriander seeds - 2tsp
Cumin seeds - 1tsp
Fenugreek - 1/4tsp
Mustard seeds - 1/4 tsp
Mace, cinnamon, cloves, cardamom, nutmeg - 2tsp
Black pepper - 2 tsp
Garlic - 1 whole
Ginger - 1 inch piece
Green chilies - 4
Coriander leaves - 1 hand full
Coconut grated – 3 tbsp
Cashew nuts, kismis and onion fried -1/2 cup
Salt-to taste

Preparation for making veg pulao



Soak rice for 15 minutes and drain.
Heat ghee, add the drained rice and fry in for 2 minutes and keep aside.
Roast coriander seeds, mustard, fenugreek, garam masala, black pepper, and cumin seed one by one separately and keep aside.
Grind the roasted spices with coconut grated, coriander leaves, green chilies, garlic and ginger and keep aside.

Making pulao method


Heat ghee or oil in a pressure cooker.
Add sliced onions. Fry for 2 minutes.
Add chopped carrots, beans, potatoes one by one.
Then add the ground spice paste and chopped tomatoes.
When it’s sautéed for a few minutes, add rice and 4 cups of boiling water with adequate salt and a pinch of sugar and close with a lid.
Wait for 1 whistle. Switch the stove off and wait till the pressure cooker cools down. Open the cooker when the pressure has gone down and it is safe to open.
Carefully mix the pulav.

Serving suggestions


Transfer veg pulao to serving bowl and garnish with roasted cashews, kismis and fried onions.

Variations of veg pulav recipe


You can add cauliflower, green peas or any veg you like. You may add panneer too.

It’s a very healthy veg pulao as it contains the spices such as mustard, fenugreek, black pepper, cumin seeds etc.which help in easy digestion.

There is no need of any side dish to serve with this veg pulao. It can be served by itself.
