About soaking the dals
by: Nayana

Hi Priya,

As the instructions say that the dals should be ground to coarse powder, the dals are not soaked before grinding. Water is added to the powder to make a thin batter.

I think keeping the batter for about 10 minutes before making moong dal dosas would be a good thing.

You can also get the similar results by getting the dals ground in larger quantities in the flour mill(if you have a flour mill in your area). This ground flour can be kept for more than a month at the room temperature and for a longer time in the fridge.

You can also add rice to this mixture. So 2cups moong dal, 1 cup rice, 1 cup urad dal can be ground together to a dry powder and mixed with water 10 minutes before making dosas. You may also add 1tbsp dhania(coriander seeds)1tbsp jeera( cumin seeds)along with dals while grinding which will give a good flavor.

This makes for the wonderful instant moong dal dosa.

Best wishes!
