Cauliflower or phool gobi is a quick cooking vegetable. It tastes good too.

This dry cauliflower subzi or gobi subji is a good accompaniment to chapati, rice, roti, naan etc.

Main ingredients for dry cauliflower subji - Gobi subzi

  • Cauliflower - 1 medium sized head, about 2 cups of florets
  • Salt - 1/2 tsp or according to taste
  • Red chili powder - 1/2 tsp or according to taste
  • Oil - 1 tbsp
  • Rai/Mustard seeds - 1/4 tsp
  • Jeera/Cumin seeds - 1/4 tsp
  • Turmeric powder - 1/4 tsp
  • Hing/asafotida - a pinch
  • Garam Masala - 1/4 tsp,  or according to taste

How to make dry cauliflower subji - gobi subzi

Step by step instructions for making dry cauliflower subji - gobi subzi

1. Heat oil in a kadai/pan. When oil is hot, add rai/mustard seeds and jeera/cumin seeds. Let them splutter. Then add hing/asafotida.

2. Add the cleaned cauliflower. Add haldi/turmeric powder.

3. Add red chili powder, salt, sugar(if adding), garam masala powder. Add 1 tbsp water. Mix well. Cover and cook for 5 minutes on low flame. Stir once in between.

4. Press a floret with a spoon or spatula to check if cauliflower is done, if it is soft enough to your liking. If it is not soft enough, and all the water has evaporated, add a small spoonful of water, cover and cook again for a few minutes.

When it is cooked soft enough to your liking, add chopped dhania/cilantro/coriander leaves. Mix well. Keep covered till serving time.

Dry gobi / cauliflower subzi in ready to serve.
