This Cucumber salad is a very easy to make salad. It is one of the easiest one among the cucumber salad recipes. It looks and tastes fresh and keeps you cool too.

Cucumber is also known as kheera / kakadi (hindi), kaakdi (marathi), savatekai (kannada) etc. This cucumber salad is known as kakdichi koshimbir in Marathi, savtekai kosambiri in Kannada.

In the hot summer months, you can cut the cucumber in thin slices, sprinkle a little salt to get a cool snack.

Use this recipe instead for variation. For this salad, you can use only cucumber or add other vegetables such as carrots, tomatoes, onions etc.

You can add all the other vegetables that you would normally make salad with. It is a popular one from the Indian salads.

In south India, it is made as part of festival foods too. The Salad looks so inviting and cool. Here is the recipe for cucumber salad for you.

How to make Cucumber Salad

Main ingredients for cucumber salad - koshimbir

Ingredients for cucumber salad for 3-4 servings.

  • Chopped cucumber - 2 cups
  • Salt - 1/4th teaspoon
  • fresh grated coconut (optional) - 2-3 tablespoons
  • sugar - 1/4 th teaspoon
  • lime juice - 1 teaspoon.
  • Coriander leaves - 1 tbsp chopped
Ingredients for tempering:
  • Oil - 1 teaspoon
  • Rai - Mustard seeds - 1/4 teaspoon
  • Jeera - Cumin seeds - 1/4 teaspoon
  • Green or Red chilli - 1 or 2 according to taste, slit in two.
  • Curry leaves - 4-5 
  • Hing - asafoetida - a pinch

Step by step instructions for making cucumber salad - Kakdi koshimbir

Make tempering :

  1. Heat oil. Add mustard and cumin seeds.
  2. When they stop cracking, add chili pieces.
  3. Add asafoetidas, curry leaves.
  4. Take off fire. Let cool.

Final mixing:

  1. In a salad bowl, add cucumber, salt, sugar,coconut, coriander leaves, lime juice.
  2. Mix well. Add the cooled seasoning. Mix well again.

Serve immediately or Cool in fridge for 30 minutes and serve.

 Tips and variations

You may add some roasted and powdered peanuts to this salad.

Add 1/2 cup of thick yogurt. Add this just before serving.

Add 2 tbsp of hung curd.
