Eggplant in white sauce Curry Recipe
Eggplant in white sauce curry is very yummy curry recipe that you can serve with any flat bread.

How to make eggplants in white sauce
List of ingredients and the quantity for eggplant in white sauce
eggplants(brinjal - aubergine) - purple,round 8 in number.
peanuts - 1 1\2 tsp
sesame seeds(til) - 1 1\2 tsp
poppy seeds(khaskhas) - 1 tsp
grated coconut - 2 tbsp
cumin seeds(jeera) - 1\4 tsp
fenugreek seeds(methi dana) - 1 pinch
dry red chillies - 3 or 4
garlic - 6 flakes
curry leaves - 8 to 10 leaves
green chilli - 3 slit
red chilli powder - 1\4 tsp
jeera seeds - 1\4 tsp
coriander powder - 1 tsp
turmeric powder - 1\3 tsp
tamarind paste - 1 1\2 tbsp
water - 1 small cup
salt according to your taste
garam masala - 1\4 tsp.
Preparation to do before cooking
- Cut eggplants into 6 slits vertically and deep fry until it turns little brown inside.
Fry and keep all the ingredients aside that are given below
Roast With little oil:
3.dry red chillies
Roast without oil:
4.3 flakes of garlic
Step by step cooking instructions
1.grind all the fried ingredients and make it into a fine paste.
2.Heat a pan with 1 tbsp of oil,add cumin seeds and methi seeds.let them splutter.now add green chilli,remaining flakes of garlic.let everything fry nicely.
3.Add grounded paste saute till oil seperates if you want you can add 1\2 cup of water.
4.Add chilli powder,turmeric powder,coriander powder and saute again for 1 min 30 sec.
5.Now add fried eggplants in the pan.add 1\2 cup of water,salt and tamarind paste to the mixture,cook well.
This curry can be served with roti,chapathi and rice as well.
