Whole wheat bread veg sandwich is good dish for breakfast, snack or dinner. You may also use it for the lunch box. It is loved by kids as well as grown ups.
You may make the preparation in advance and assemble before serving/packing.
I am using whole wheat/ atta bread for this recipe. You may use your favorite bread such as multi grain bread or white bread.
Step 1: Add boiled, peeled and chopped potatoes in a mixing bowl.
Add chopped capsicum, grated carrot and chopped onion.
Then add chopped coriander leaves and salt.
Add black pepper powder. You may add red chili powder too if you wish.
Add sugar as per taste.
Add aloo bhujia or fine sev, which ever you like or is available.
Mix everything well. Taste and see if you need to add more salt, sugar etc.
Here is some green mint chutney that we usually use for chaats. You may also use any other chutney of your choice. Chutney should not be watery.
Take two bread slices. Apply green chutney to one slice and some tomato ketchup/ tomato sauce to the other.
Add about 2 tbsp of the vegetable mix to the slice where we spread chutney. Place the ketchup applied slice over vegetable mix and press together.
Heat a litter butter or ghee in a pan or sandwich toaster.
Place the assembled sandwich on it and let cook for 30 seconds.
Turn and let cook the other side too.
Take out on a plate and then cut in triangles or squares, as you like.
Our veg sandwich is ready to serve. You may have it for breakfast or pack for lunch.
