Sweet corn Soup Recipe

This Sweet corn soup is a welcome dish in the cold winter or at any other time.

You may use fresh Sweet corn for this soup if available.

Or use canned sweet corn when fresh is not available.

It is easy to make and needs only a few ingredients.

You may make it and keep it in the fridge for 2-3 days. Just heat it and serve.

How to make sweet corn soup

List of ingredients and the quantity for making sweet corn soup for 2-3 servings

  • Sweet corn – 1 packet - about 1 cup

  • Carrot - 1 medium sized

  • Spring Onion - 2-3

  • Butter or Ghee - 2-3 tsp

  • Salt – 1/2 tsp or according to taste

  • Black pepper powder - 1/2 tsp or according to taste

  • water - 3 to 4 cups according to required consistency

  • Preparation to do before cooking

  • Boil Sweet corn till just done.(skip this step if using canned sweet corn)
  • Finely Chop carrot to small pieces.
  • Chop spring onions

    Step by step cooking instructions for sweet corn soup

    1. Add Boiled sweet corn in the blender and grind a little.

    2. Sauté the sweet corn puree in ghee or butter for 2-3 minutes.

    3. Add finely chopped carrot & spring onion to it. Sauté well.

    4. Then add water to it. Bring to boil. add salt & pepper according to taste. Let it cook/boil for 5-6 minutes.

    Serving suggestions

    Serve hot garnished with chopped fresh coriander leaves

    What variations can you make with this recipe?

    You may add other vegetables such as chopped cabbage, cauliflower, fresh green peas to this soup. Add the seasonal vegetables.
    To make it spicier, add a pinch of red chili powder or chili paste.
