This mushroom soup recipe is easy to make recipe.

Vegetarian Soups are an important part of the winter foods.

Mushroom soup is one of these vegetable soup recipes.

Just try it and get the health benefits of mushrooms along with filling your tummy.

Simple to make, filling and yummy.

How to make mushroom soup

List of ingredients and the quantity to make 2-3 servings

  • 10-15 button mushrooms

  • 1 - onion

  • 1/2 of a small capsicum

  • Butter or olive oil

  • salt – 1/2 tsp or according to taste

  • black pepper - 1/2 tsp or according to taste

  • Preparation to do before making soup

    Wash and chop the mushrooms, onions, and capsicum.

    Method to make mushroom soup

  • Heat butter/olive oil in a pan.

  • Add the chopped onions to the pan and fry them until they turn translucent.

  • next add the mushrooms and capsicum , sauté well for 3-4 minutes.

  • Add 2 cups of water. Cover the pan and allow it to cook for 5-6 minutes or till the mushrooms re done.

  • When the mushrooms get cooked, turn off the flame and allow it to cool.

  • place a stainless steel colander/sieve on a pan. Pour the cooked mixture onto the colander. Strain the water, put the mushrooms in the blender and blend. Filter again using the same water we have strained.

  • Add this filtered puree in the pan, along with salt and stir it gently.

  • When it starts to boil, turn off the flame.

  • Sprinkle some black pepper powder and serve it hot.

  • Tips

    You may chop two mushrooms finely, sauté them in butter and finally add them in soup while serving.

    You may use carrots, coriander for garnishing and other veggies that you like for garnishing .
