Healthy Cucumber Salad

ThisCucumber salad is a very easy to make salad. It is one of the easiest one among the cucumber salad recipes. It looks and tastes fresh and keeps you cool too.

Cucumber is also known as kheera / kakadi(hindi), kaakdi(marathi), savatekai(kannada) etc

In the hot summer months, you can cut the cucumber in thin slices, sprinkle a little salt to get a cool snack. Use this recipe instead for variation.

For this salad, you can use only cucumber or add other vegetables such as carrots, tomatoes, onions etc.

You can add the vegetables that you would normally make salad with.

It is a popular one from the Indian salads. In south india, it is made on festival days too.

The Salad looks so inviting and cool. Here is the recipe for cucumber salad.


How to make Cucumber Salad


Ingredients to serve 3

  • Chopped cucumber - 2 cups
  • Salt - 1/4th teaspoon
  • fresh grated coconut - 2-3 tablespoons
  • sugar - 1/4 th teaspoon
  • lime juice - 1 teaspoon.
  • Coriander leaves - 1 tbsp chopped
  • Ingredients for Seasoning:

  • Oil - 1 teaspoon
  • Mustard seeds - 1/4 teaspoon
  • Cumin seeds - 1/4 teaspoon
  • Green or Red chilli - 1 or 2 according to taste, slit in two.
  • Curry leaves - 4-5
  • Make Seasoning :

    1. Heat oil. Add mustard and cumin seeds.
    2. When they stop cracling, add chilli pieces.
    3. Add asafoetidas, curry leaves. Take off fire. Let cool.

    Final mixing:

    1. In a salad bowl, add cucumber, salt, sugar,coconut, coriander leaves, lime juice. Mix well.
    2. Add the cooled seasoning. Mix well again.
    3. Serve immedietly or Cool in fridge for 30 minutes andserve
